Raspberry Jam Loaf with Streusel Topping

Soft and buttery Raspberry Jam Loaf with Streusel Topping. There is just a special kind of satisfaction that comes from baking your own treat and enjoying it freshly warm out of the oven. Made with the usual loaf ingredients, delicious raspberry jam and an amazing streusel topping, this loaf melts in the mouth. This loaf is soooo easy to make, comes together in less than 15 minutes, and once baked, you get to enjoy a warm loaf filled with delicious raspberry jam filled in the middle. The streusel makes it extra special and more decadent to eat. If you make it, make sure to share it! And make sure to eat it warm, its the best.

About this recipe

The recipe might sound basic, not entirely new, but simple and basic recipes usually turn out really good. And to be honest, I love both simple and complicated recipes. I usually go back and forth, depending on what I am in the mood for. Sometimes I want a quick dessert, and other times I am happy to set aside hours cooking or baking something delicious.

Anyway, the idea for this recipe has been on my list of things to bake. I loved the idea of a sweet loaf that is filled with jam in the middle and a crunchy, nutty top. The combination of a soft loaf with a sweet jam filled middle and a crunchy topping sounded like perfection. This is the kind of loaf that can be enjoyed with a delicious cup of tea or coffee. I would highly recommend you enjoy this on the day, freshly warm out of the oven. That is when it tastes the best!

This recipe uses basic ingredients, nothing fancy and no expensive ingredients here! Making the loaf comes together quickly with a mixer, the streusel takes a few minutes to bring together, and you don’t even have to make the jam from scratch. To add some extra sweetness, make the lemon glaze. But if the loaf is sweet enough for you, you can leave this part out. It all depends on how sweet you like it.

Making the streusel & loaf

If you want a quick rundown, here it is. 

The first step is to make the streusel so that it is ready for the topping of the loaf. In a small bowl, whisk the flour, brown sugar, cinnamon and chopped walnuts. Add the cold unsalted butter and mix it into the flour mixture using your hands or a fork, until the mixture resembles thick crumbs.

Onto the loaf. In a mixing bowl, add the Greek Yogurt, vanilla essence, lemon juice, eggs, melted butter and milk. Mix until combined. In a separate bowl, combine the flour, sugar, baking powder and a pinch of salt. Mix the dry ingredients into the wet ingredients until combined.

Pour half of the batter into an already lined loaf tin. Then add 4 tablespoons of raspberry jam on top, spreading it out evenly. Top the jam with the remaining loaf batter. Top the loaf with the already prepared streusel.

Bake in the oven for 40-45 min. Allow the cake to slightly cool.

While the cake is baking, make the glaze

This part of the recipe is entirely optional. If you want to include a sweet lemon glaze prepare it while the cake is baking. In a small bowl, mix the powdered sugar, milk, honey and lemon zest. There is something about adding honey to a glaze that makes it extra creamy and it is delicious. Once the cake has slightly cooled, pour the glaze either over the entire loaf or on individual slices. Make sure not to pour the glaze over a hot loaf, because it will just run off onto the plate.

And that is basically all you need to know. The streusel, loaf and glaze are all very basic things to put together. But the simplicity creates a beautifully soft and sweet loaf with a delicious nutty, streusel topping.

For The Loaf
60g Greek Yogurt
120ml milk
1tsp vanilla essence
2 whole eggs
50g unsalted butter, melted
1/2 lemon, juice of
200g all purpose flour
1tsp baking powder

For The Streusel
70g all purpose flour
50g brown sugar
1tsp cinnamon
50g unsalted butter, cold, cubed
The Lemon Glaze
50g powdered sugar
1tbsp milk
1tsp lemon zest
1tsp liquid honey

Directions

The Streusel
Preheat the oven to 180C. Butter a loaf tin with some butter and place baking paper on top (the butter helps the baking paper stay in place).
In a small bowl, mix the flour, brown sugar, cinnamon and cold, cubed butter. Using your hands or a fork, mix the butter into the flour mixture until it resembles crumbs. Set it aside.

The Loaf Batter
In a medium bowl whisk in the Greek yogurt, vanilla extract, 2 eggs, lemon juice, milk, and melted butter. In a separate bowl, whish the flour, baking powder, sugar and a pinch of salt. Gradually add the dry ingredients to the wet ingredients and mix until combined.
Pour half of the batter into the loaf tin. Then, add 4 tablespoons of raspberry jam and spread evenly. Pour the remaining loaf batter over the jam filling. Top the loaf with the already prepared streusel.Bake in the oven for 40-45 min. Once the loaf is baked, allow the loaf to slightly cool.
Mark as complete

The Lemon Glaze
In a small bowl whisk the powdered sugar, zest of one lemon, honey and milk until combined. Pour the glaze over the loaf or over individual slices. Serve & enjoy.

    delicious. Can I use clarified butter instead of butter as I mostly use clarified butter for baking?

      Hi! Yes, you can use it. If you use it in baking often and find that it gives a good result then I don’t see why not 🙂
