This No-Bake Chocolate & Coconut Slice is a dreamy dessert to make and a delicious one to eat! This indulgent dessert is just that – induldgent, and one that you can enjoy any time. While I love desserts that need more love and attention (aka baked desserts), there is nothing wrong with a dessert that requires zero baking time. Quick and easy to put together, simply place in the fridge to set, and cut into slices whenever you have a craving for something sweet..

About this recipe

For those who know me, will know, that I do not make no-bake desserts all that often. While I love to immerse myself into baking delicious treats, sometimes I just want something quick or with minimal effort. This is when this No-Bake Chocolate & Coconut Slice comes in because I just feel like you can’t ever go wrong with a chocolate and coconut combo! I mean think of the bounty bars, its just the perfect mix.

Also, the Serbian in me has to add walnuts to this dessert! I’m sorry, I can’t help it. But thank the food Gods that walnuts pair so well with so many recipes or this would not taste so great. If you have been following me for some time, you may have seen a similar dessert with a wild jam and berry topping, but this version is much better! Let’s say it’s my new and improved no-bake dessert.

Making the slices

There are three layers to make for this dessert. You may be thinking, that’s a lot, but with zero baking time, it really isn’t so bad. You will need to make the bottom, chocolate layer first. Simply mix all of the ingredients in one bowl, then with your hands, press the base into a pan until nice an even. Use a spoon or knife to level everything out nicely. Then, make the coconut layer. The process is the same, mix all ingredients in one bowl, then layer on top of the chocolate base. Lastly, make the chocolate topping, spread over the top. Refrigerate the entire dessert straight away, or place straight in the freezer if you want to eat it sooner, rather than later.

And that’s it! See, no oven baking involved. Just an easy way to satisfy that sweet tooth.

Can this recipe be vegan?

Yes. You can definitely substitute some of these ingredients for vegan friendly options. But keep in mind, that swapping out ingredients may result in a different taste. However, it is entirely possible. I simply like to stick to the recipe as I know it, but from the top of of my head, here are some ingredient swaps.

Chocolate – choose vegan friendly chocolate, there are plenty options on the market.

Honey – you can use date syrup or maple syrup.

Biscuits – seek out vegan biscuits at your supermarket. As long as they are plain biscuits, they will work great.

Milk – a no brainer, simply swap normal milk for oat, almond or any other plant-based milk.

Butter – use a vegan friendly option. There are vegan butters available in the butter isle of most supermarkets.

Ingredients:

for the base
200g ground walnuts
200g plain, grounded biscuits
120g milk chocolate, melted
15g cocoa powder
150ml milk
pinch of sea salt

200g desiccated coconut
85g liquid honey
1tsp vanilla extract
150ml milk
40g unsalted butter (melted)

200 g dark chocolate
30g melted butter

Directions

Grease a square baking dish with butter, then place baking paper and set aside (the butter helps the baking paper stick in place). In a large bowl, combine the grounded walnuts, grounded plain biscuits, melted milk chocolate, cocoa powder, milk and sea salt. Mix all of the ingredients with a spatula until everything is well combined. Using your hand, press the chocolate layer into the square baking dish. Then, level the bottom layer with a knife, until the bottom surface is nice and even.
Place in the freezer to chill, while you make the coconut layer.

In a large bowl, combine the desiccated coconut, liquid honey, vanilla extract, milk and melted butter. Mix until everything is combined.
Place the coconut layer on top of the chilled chocolate base, spread evenly with a fork or knife, until the mixture is compacted nicely on top. Set in the fridge to set, or allow to set in the freezer for one hour.

Once the first two layers have set. In a pot over the stove, or in the microwave, melt the chocolate and butter together. Spread evenly over the coconut slice and place in the fridge to set.
Once you are ready to cut into slices, remove the dessert from the fridge and let sit at room temperature for 5 minutes. Then warm a sharp knife under hot water and cut into slices. Clean the knife after each cut, for nice clean slices.

Notes
This no-bake slice can sit in the fridge for up to 3 or 4 days. Simply cover with cling wrap and leave in the fridge.
