Chocolate & Mascarpone Cake

A rich and decadent Chocolate & Mascarpone Cake to satisfy chocolate cravings. Made in one bowl and baked in a cake tin, this delicious cake takes little effort to make yet delivers such a delicious, soft, and rich cake to bite into. Made with butter, dark chocolate, eggs and the unusual but ever so important ingredient – mascarpone. If you love a rich dessert, then give this delicious cake a go!

About this recipe

What do you do when you have a lot of mascarpone left over? Bake it into a dessert. Mascarpone is a cheese that is combined into a lot of desserts or pasta and there is a good reason for this. Mascarpone is light and soft which combines perfectly into about any recipe. It also has low salt content and is a very creamy cheese which adds the perfect amount of creaminess to recipes.

You may be wondering why I have mascarpone left over? Well, it is certainly not the type of cheese that I buy on a regular basis. But recently I tried the Mascarpone Cake with Red Wine Prunes from the cookbook Dessert Person. This cake was divine! If you get your hands on this book, then that cake is a must try! However, this left me with a fair amount of mascarpone in the fridge and immediately the Chocolate & Mascarpone Cake came to mind.

A twist on the flourless chocolate cake

I have made the popular flourless chocolate cake countless times before. It is not about the lack of flour which makes this type of cake so appealing to me, but instead how light yet so rich the cake turns out. So, the idea of making a mascarpone chocolate cake was a no-brainer. This Chocolate & Mascarpone Cake is made with no flour at all, the eggs and mascarpone do the job of holding this cake together. Not forgetting that they also add delicious, rich flavour.

If done well, flourless cakes can turn out so great! And you can’t go wrong with chocolate! This version of a flourless chocolate cake is perfection!

The baking process

There is not much fuss in making this cake. You do not need any fancy equipment either. The cake requires one bowl, a whisk, a spatula, and a cake tin.

You will need some butter, dark chocolate (70%), sugar, eggs, cocoa powder, and mascarpone.

Preferably, set up a double boiler and melt the butter and chocolate together. Cool this mix down for ten minutes before transferring into a mixing bowl (a spatula will come in handy).

Alternatively, you can melt the butter and chocolate in a pan on low heat so that nothing burns. This can also be done in a microwave. However, I prefer the double boiler method, simply because I don’t have to worry about anything burning.

To the butter and chocolate mix, add the sugar, whisk, and combine well. Then add the eggs one by one, followed by the cocoa powder. Finally fold in the mascarpone cheese with a spatula.

Transfer the mix into a small cake tin and bake in the oven. Allow the cake to slightly cool before serving.

See, nothing fancy here

With no fancy equipment, or baking techniques, there is no fancy methods or much fuss in making this Chocolate & Mascarpone Cake. Yet you get such a delicious chocolatey dessert. The mascarpone may seem like a bit of a usual ingredient, but it works. I have tested this recipe twice before sharing it with you, so trust me, it’s worth making. Whether you are looking to bake something over the weekend, or to prepare something for your family, friends, a dinner party, then this could be the cake that makes everyone say WOW!

The Cake
150g unsalted butter
150g dark chocolate
5 whole eggs
100g caster sugar
200g mascarpone, room temperature
50g cocoa powder

Directions

To begin, set up a double boiler and melt the butter and chocolate over medium heat. Stir the butter and chocolate regularly until everything has completely melted. Transfer the mixture into a mixing bowl and allow to cool for ten minutes.
Alternatively, melt the butter and chocolate in a pot over low heat. Stir the butter and chocolate regularly, making sure nothing sticks to the bottom. OR, melt the butter and chocolate in a microwave, at 30 second intervals and mixing the butter and chocolate before placing back in the microwave.

To the butter and chocolate mix, gradually add in the caster sugar and combine with a whisk until the sugar has incorporated. Then add in the eggs, one at a time. After adding each egg, give the mix a quick whisk and then add in the next egg. You do not want to over mix the batter.
Add in the cocoa powder and combine with the whisk. Finally, with a spatula fold in the mascarpone cheese until it has completely incorporated into the mix. At this point the mixture will appear a little more solid in texture and this is okay! The cake will soften in the oven.

Transfer the cake mix into a small cake tin that has been laid with baking paper. Using a table spoon, gently spread out the cake evenly over the tin. Bake in the oven at 150°C for 45 minutes.
Once the cake is done, open the oven door and allow the heat to escape and the cake to cool down. Serve the cake warm with whipped cream or ice-cream on the side. Alternatively, serve the cake once it has completely cooled.

This cake can keep in the fridge, covered, for up to 3 days.
