Rich, decadent and completely irresistible Chocolate & Cherry Brownies. I love delicious homemade brownies, especially with more decadent goodness added to it. These brownies are chocolatey, soft and filled with chunks of juicy cherries. Cherries and chocolate are such a classic combination so you really cant go wrong here. Brownies are something I prepare when I need a quick and low effort dessert They really are super easy to make, baked in one pan, cut into slices and ready to enjoy. I love to eat them warm, but you can also place them in an air tight container and save them for later.

About this recipe

Whenever I need to prepare a quick dessert, I often turn to the good old brownies. This is quiet surprising as for the longest time, I was not a fan of brownies. They were not a part of our childhood, Serbian dessert repertoire. Nor are they really a Serbian dessert at all. But, all it took was for me to start making these at home from scratch, and I started to love them. Especially when they are fudgy and freshly warm out of the oven.

The fun thing about brownies is that you can always add new ingredients, add more flavour and therefore create even more delicious brownies. I have had a jar of pitted cherries sitting in my pantry and it was time to use them. Instead of making the Serbian Sour Cherry & Filo Pastry Pie, I opted for brownies as it requires simple pantry ingredients I always have on hand. You can use fresh cherries. However if they are not in season for you, like they are not for us, simply drain a jar of pitted cherries and use them in this recipe. Cherries from a jar are usually a lot cheaper as well (depending on where you live).

Making the brownies

The brownie is, of course, so easy to make. Before you begin, pre-heat your oven to 180°C. Simply melt the butter and chocolate, and transfer into a large mixing bowl. Allow this to cool for at least 5 minutes before whisking in the granulated sugar. Add in the 4 eggs, one at a time, mixing each egg into the batter before adding the next one. However only mix in each egg until just combined. If you overmix each egg, the brownies may turn out too chewy. The next step is to add the sieved flour, cocoa powder and baking powder Be sure to sieve these ingredients as you do not want any clumps in your brownies. Finally, add half of the pitted cherries to the batter and combine.

Transfer the brownie batter into a pan, already lined with baking paper. Spread the batter out evenly across the pan and into all of the corners. Then, with your hands, add the remaining pitted cherries, one by one. Place them evenly across the batter and gently press them down. Bake the Chocolate & Cherry Brownies in the oven at 180°C for 35 – 40 minutes, or until a sharp knife comes out clean. Remember oven heat can vary so keep an eye out. Once baked, allow the brownies to slightly cool before serving.

Some tips?

Melt the chocolate & butter properly: Melt the chocolate and butter over low heat or use a double boiler to avoid burning. Stir constantly until smooth.

The cherries; You can use fresh cherries, but make sure to remove the pip from each one individually. Alternatively, use pitted cherries from a jar. You can find these in the canned section of your supermarket, usually with other canned fruits.

Avoid overmixing the batter: When combining the wet and dry ingredients, mix until just combined. Overmixing can lead to dense brownies.

Add only half of the cherries to the batter: Fold in the chopped cherries into the brownie batter just before pouring it into the pan. This distributes the cherries evenly throughout the brownies.

Adjust baking time: Since the cherries release some moisture, the brownies may take a little longer to bake. Check for doneness by inserting a sharp knife into the center; it should come out clean or with a few moist crumbs.

Let the brownies cool before slicing: Allow the brownies to slightly cool in the pan before cutting them. This helps them set and prevents them from crumbling.

200g unsalted butter, melted
200g dark chocolate, roughly chopped & melted
200g caster sugar
4whole eggs
100g all purpose flour (sieved)
20g cocoa powder (sieved)
1tsp baking powder
250g pitted cherries, drained and rinsed

Directions

Make the batter
Preheat the oven to 180°C and line a square baking tin with baking paper. In a medium pot melt the butter and chocolate until smooth. Pour the butter and chocolate into a large mixing bowl and allow to cool for at least 5 minutes. Once cooled, gradually whisk in the granulated sugar. Next, add in the eggs, one at a time, whisking each egg before adding the next one.
With a spatula, combine the sieved flour, cocoa and baking powder. Gently combine until no crumbs remain. Lastly add in half of the pitted cherries and fold into the batter. Pour the brownie batter into the already lined baking tin and spread out evenly. Lastly, using your hands, add the remaining pitted cherries, adding them into the batter one by one and gently pressing them into the batter.

Bake
Bake the chocolate and cherry brownies in the oven at 180°C for 30 - 40 minutes. The baking time may vary on your oven. To check, towards the end, insert a sharp knife into the brownies to make sure it has cooked through.
Once baked, allow the brownies to slightly cool before cutting into slices. Serve & enjoy!

Notes
You can use fresh cherries, but make sure to remove the pips. If you are using cherries from a jar, make sure to drain them from any excess moisture.
